Buffalo Cuury..! Kerala style flavoursome meat curry slow cooked in wood fire!
Buffalo meat with bones - 1 kg
Washed and cleaned
Shallots - 200gm
Whole garlic with skin cut into halves - 2
Green chillies - 6
Curry leaves -few
All Spice leaves (Sarvasugandhi) - 2 optional
Turmeric powder - 10 gm
Salt to taste
In a clay pot arrange all the ingredients (ref video) cover and slow cook in wood fire stove for 1-2 hours. Add water accordingly. Keep it aside
For the curry
Coconut oil - 50 ml
Fenugreek seeds - 2gm
Fennel seeds - 5gm
Coconut pieces - 100 gm
Ginger chopped - 50 gm
Garlic cloves - 10
Onions sliced - 2
Shallots - 100 gm
Kashmiri Chilly powder - 40 gm
Coriander powder - 60 gm
Black pepper powder - 20 gm
Garam masala powder - 10 gm
In a large Kadai heat Coconut oil add fenugreek seeds, fennel seeds and coconut pieces. Sauté till golden brown add ginger garlic onion and shallots sauté till transparent add the spices and slow roast for two minutes add the boiled meat and stock cook for 10-15 minutes. add garam masala and check the seasoning.
